Wagashi begins with observation.
A plum blossom before spring fully arrives.
The deep green of early summer.
A maple leaf just before it falls.
In nerikiri, these small seasonal moments are shaped by hand — not copied exactly, but translated into color, form, and feeling.
Our wagashi workshops are an introduction to this way of seeing. You will learn how simple ingredients can become flowers, birds, leaves, and seasonal symbols, while discovering the stories and ideas behind Japanese sweets.
No previous experience is needed.
Only curiosity, patience, and the willingness to look a little closer.
At Biyori, wagashi is not treated as decoration.
It is a small edible expression of the season.
A moment to make.
A moment to taste.
A moment to remember.

WORKSHOPS
Together, we create seasonal motifs such as flowers, leaves, or small animals, while learning the basic techniques and stories behind wagashi.
The workshop can be arranged for one person, couples, friends, families, or small groups.
No previous experience is needed.
A season you can shape, taste, and take home.
That was a super-interesting interactive master class. We received a hearty and warm welcome and enjoyed the relaxed and meditative atmosphere. It is to be particularly valued in a busy noisy city and if you are a person from the Western culture. The matcha tea ritual was a magical performance and a very generous treat! An unforgettable experience, many thanks to Yen!
